Chocolate-Covered Holiday Bites
For Easter, I am making little white chocolate nests filled with blueberries, nuts, and edible flowers, along with a set of dates that look like decorated eggs.
In these recipes, I want to show you that you can take something decadent like white chocolate, which is higher in sugar and fat than dark chocolate, and still make it healthy-ish for occasions like Easter when aesthetics take center stage.
These bites are simple, but they carry something much more, with ingredients that have supported energy, cognition, and well-being for thousands of years. Nuts, berries, olive oil, dates, and even edible flowers are ingredients that ancient cultures used for both culinary and medicinal purposes.
You can swap in 70%+ dark chocolate, another ancient ingredient (5000 years!) still used today, which is rich in cocoa solids that provide heart-healthy flavonoids (powerful antioxidants). That’s how I usually make these recipes.
These treats also fit naturally into Passover, which at its core is about returning to simple, foundational foods, ingredients that nourish without excess.

Blueberry & Nut Bites*
Makes 12 to 14 bites
Ingredients
½ cup 70% + dark chocolate chips, or white chocolate**
1 teaspoon olive oil
Pinch of salt
½ teaspoon vanilla extract
1/2 cup walnuts, pecans, and/or pistachios (whole or chopped)
1 cup blueberries
Optional: 2 tablespoons dried edible flower petals
*To make this recipe kosher for Passover, use chocolate and vanilla that are certified kosher for Passover, or simply omit the vanilla.
**White chocolate is a treat and does not have the same benefits as dark chocolate, which is packed with cocoa solids, providing heart-healthy antioxidants (flavonoids), whereas white chocolate lacks these solids, containing only cocoa butter, sugar, and milk.
Directions
Line a small baking sheet with parchment paper.
Melt the chocolate and oil in a double boiler (or in a microwave-safe bowl (not metal) for about 1 minute. Stir.
Spoon 1/2 to 1 teaspoon of melted chocolate on the parchment paper.
Place 5 blueberries and 4 pieces of nuts on each pool of chocolate. You can pile them up a bit.
Drizzle a little more chocolate over the blueberries and nuts; just a little drizzle holds it all together.
Freeze for about 15 minutes, or until set. Keep in a sealed container or bag in the freezer.
Total time: ~15 minutes active work time. ~15 minutes to freeze.

Chocolate Drizzled Dates
Makes 16 dates
Ingredients
½ cup 70% + dark chocolate chips, or white chocolate**
1 teaspoon olive oil
Pinch of salt
½ teaspoon vanilla extract
16 pitted dates (pit removed)
¼ cup walnuts, pecans, and/or pistachios (whole)
2 tablespoons dried edible flower petals

Fill the dates with a few nuts and close. Place in a single layer on the parchment-lined baking sheet, allowing about an inch between each date.
Melt the chocolate and oil in a double boiler (or in a microwave-safe bowl (not metal) for about 1 minute. Stir.
Drizzle a little chocolate over the dates; just a little drizzle holds it all together.
Sprinkle on some edible flowers.
Freeze for about 15 minutes, or until set. Keep in a sealed container or bag in the freezer.
Total time: ~15 minutes active work time. 1 to 2 hours to freeze.
