Macerated Strawberries
If you want something sweet on your menu, one of my favorite desserts is Macerated Strawberries. Fresh strawberries, a splash of Kosterina balsamic vinegar, a drizzle of maple syrup, and creamy Greek yogurt (vanilla ice cream is amazing, too) remind us that beautiful food doesn’t have to be complicated. It’s an easy no-cook dessert! Pair it with my almond-flour Thumbprint Cookies.
MACERATED STRAWBERRIES
Serves 4
INGREDIENTS
2 pints (4 cups) fresh strawberries, sliced thick
2-3 tablespoons balsamic vinegar or lemon juice (I love a thick balsamic vinegar and Kosterina’s is divine)
1 tablespoon sugar or maple syrup
1 pint plain Greek yogurt, plant-based yogurt, or vanilla ice cream for serving
Optional: a little black pepper
Freshly grated lemon zest
Fresh mint leaves, for serving
DIRECTIONS
Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar or maple syrup, and pepper in a bowl. Set aside at room temperature.
To serve, place a serving of the strawberries in a bowl with a scoop of yogurt or ice cream. Dust lightly with lemon zest and don’t forget the fresh mint!
