Greek Pasta Salad

This healthy Greek pasta salad combines fresh vegetables, feta, herbs, gluten-free pasta, and a homemade Greek vinaigrette. Perfect for warm-weather gatherings, meal prep, and Mediterranean-inspired eating.

Serve this salad with whatever summer has to offer: grilled fish or chicken, sliced baguette, or simply good conversation. Often, my most memorable get-togethers happen when the menu is simple and no one is rushing.

Dressing

  • ¼ cup extra virgin olive oil (I used Kosterina Extra-Virgin Olive Oil)

  • 3 tablespoons red wine vinegar

  • ¼ to ½ teaspoon garlic powder

  • ½ teaspoon dried oregano

  • ¼ teaspoon Dijon mustard

  • ¼ teaspoon salt

  • Freshly ground black pepper to taste

Salad

  • 4 mini cucumbers, sliced lengthwise and cut into half moons

  • 2 cups halved cherry tomatoes

  • 5 ounces feta cheese cut into ½ inch cubes

  • cup pitted olives (I used Kosterina’s Olives)

  • cup fresh mint leaves
