Greek Pasta Salad
This healthy Greek pasta salad combines fresh vegetables, feta, herbs, gluten-free pasta, and a homemade Greek vinaigrette. Perfect for warm-weather gatherings, meal prep, and Mediterranean-inspired eating.
Serve this salad with whatever summer has to offer: grilled fish or chicken, sliced baguette, or simply good conversation. Often, my most memorable get-togethers happen when the menu is simple and no one is rushing.
Dressing
¼ cup extra virgin olive oil (I used Kosterina Extra-Virgin Olive Oil)
3 tablespoons red wine vinegar
¼ to ½ teaspoon garlic powder
½ teaspoon dried oregano
¼ teaspoon Dijon mustard
¼ teaspoon salt
Freshly ground black pepper to taste
Salad
4 mini cucumbers, sliced lengthwise and cut into half moons
2 cups halved cherry tomatoes
5 ounces feta cheese cut into ½ inch cubes
⅓ cup pitted olives (I used Kosterina’s Olives)
⅓ cup fresh mint leaves
Pasta (Optional)
Fusilli or penne pasta, traditional semolina or gluten-free (I used Jovial’s Grain-Free Penne)
